The building that houses The Jane was originally a chapel called ‘Military Hospital’ located in the Groen Kwartier district of Antwerp. The chapel was constructed in the 19th century and served as a place of worship for the nearby hospital.

To enhance the oyster’s flavour profile, plankton is added to the composition.

The peach, likely prepared in a complementary form such as a puree or delicate slices, adds a touch of refreshing fruitiness that counterbalances the oyster’s saltiness.
